Eating Health on Campus



Good morning, Cards! If you have ever felt overwhelmed or confused when navigating where and what to eat on campus, then you are not alone. Most UofL students have been or are currently in this difficult position and lack guidance when it comes to finding nutrient dense meals to eat on campus. With that being said, today’s blog is dedicated to discussing UofL dining locations that offer nutrient dense meals that incorporate a variety of nutrients, vegetables, protein, and carbohydrates.  To begin with is my person favorite, Ville Grill. VG offers a wide variety of dishes that are constantly rotating to keep things interesting. VG also offers an online menu that can be utilized when planning your meal before you arrive. Various nutrient dense meals you can build at VG for dinner today is:

  • Glazed chicken breast with roasted red potatoes, corn on the cob, and roasted broccoli 

  • Salad with a variety of vegetables and legumes topped with tuna salad and a side of fruit

  • Veggie burger with corn on the cob, roasted red potatoes, and fresh zucchini 

  • Pork chop with coleslaw, fresh zucchini, and roasted red potatoes 

  • Grilled chicken and sesame noodles 

Below are examples of nutrient dense meals that can be found throughout multiple UofL dining locations. Keep in mind that you can utilize GrubHub to order food online if you want to safely social distance.


McCallisters (Miller IT Center)

  • ½ Garden fresh turkey sandwich + ½ pecan berry salad

  • ½ grilled chicken club sandwich + ½ bowl of chicken tortilla soup

Panda Express (SAC) 

  • Grilled teriyaki chicken with white steamed rice + mixed vegetables 

Market place - Olilo (SAC)

  • Make your own bowl: (base) ½ grains & ½ greens, (hummus) harissa & romesco, (toppings) carrot slaw, cucumber & tomato salad, and crumbled feta, (dressing) harissa vinaigrette


Marketplace - BBQ District (SAC)

  • Build your own platter: sliced beef brisket on no bread with coleslaw and spicy collard greens 

  • Build your own platter: pulled pork with corn muffin, bacon & onion green beans, and coleslaw 

Chick Fil A (SAC)

  • Grilled chicken cool ranch wrap with a side salad 

  • Market Salad with a fruit cup 


Einstein’s (Bingham Humanities)

  • Hummus Veg Out sandwich on an everything bagel

  • Turkey and cheddar deli sandwich on a wheat wrap with a side of fruit 

Subway (Davidson)

  • 6-inch Veggie Delite with a side of apples

  • 6-inch sweet onion teriyaki

  • Oven roasted chicken chopped salad 


Starbucks (SAC)

  • Blueberry oatmeal topped with nuts 

  • Spinach & Feta breakfast wrap 

  • Roasted tomato & mozzarella panini 


We invite you all to take the opportunity to familiarize yourself with the dining locations available on campus and to voice your opinion about campus dining. There are QR code scanners located at multiple dining locations to scan on your phone if you want to fill out a short survey regarding the positives and negatives you are experiencing with campus dining.
